One of my former chefs, Zach Gysel, has been playing around with hot sauces for a few years now. Many times, we cooks were his guinea pigs, tasting heat levels, judging the flavor profiles… often our eyes burning, tongues on fire. Well, Zach and his two brothers finally managed to get it right. These three “saucy brothers” have come up with three different hot sauce flavors with different levels of heat. Currently two of their sauces are being bottled and sold (coming soon to a store near you). You’ll get a chance to try them at the Bistro this weekend. We’ve got a few bottles out on the tables and we’re pairing them one with Fried Oysters and another with New Orleans Style Wolffish. My favorite is the Rosemary Garlic Jalapeño. We’ll have bottles for retail sale as well. I’m proud to see one of our chefs put his heart and energy into something positive and reach for a dream. Until Gyzzle’s Dryzzles reaches Tabasco status, Zach is currently the boss over at Little Ghost. If you want to watch him sling the fanciest hot dog you’ve ever tasted head to Ferndale. I hear the burger is stellar as well. Ask for a drizzle of the Gyzzle if you stop in.
