Bistro Newsletter

Michael and I took an overnight trip to Chicago last Tuesday. We went to see the band Father of Peace, a young trio from Israel. It was their first concert ever; we discovered the band on Instagram and fell in love with their unique sound. They are an odd cross of System of a Down, Weezer, Sublime and more. The female bass player, May, really adds the magic touch to this fresh band and the venue, Beat Kitchen, was small and intimate. We loved it. With their short set list (they only have one album out) we had time for a nightcap at Volo in Roscoe Village just around the corner.

Before the show we had dinner at Giant in Logan Square. We sat at the chef’s counter, which was cool to see how they executed all their dishes. And I loved the casualness of the restaurant while the food and quality of service remained upscale. One habit I hate that I see trending in restaurants, is they require you to give the server your “entire” order so they can “course” it out for you. I hate that… sometimes we like to nibble
our way through a menu. Maybe going between appetizers, pasta and
entrees in any order we like, timed how we like. I often like to order lots and just ask them to bring it out as it is ready. We share most of our food, so it doesn’t have to be served in any particular order. Anyway, our server at Giant was delightful.

Breakfast was at Lula Café, a place Mary and I visited 16 years ago before we opened the Bistro. Researching food is still one of my favorite hobbies. Our Grilled Feta appetizer is inspired by a dish they continue to serve to this day. Some things, happily, never change.
