And another challenging but fine week it has been. We were so glad to get the OK to open the Bistro on Monday. Since we were not expecting it until the end of the month Sharon and I thought we were being pro-active with ordering what we anticipated was going to be required to do so. There had been no directives as to specific rules so we flew by the seats of our pants and were pretty close. Thankfully we were ahead of the crowd and should have everything delivered next week. We’ve decided not to open until all pro-active measures are in place. Germ shields will be installed in necessary areas. Tomorrow we’ll figure out our table capacity. I’ve applied for an additional outdoor space permit from the city of Novi. They are being very open to helping us to get to the highest number of seats possible. The Bistro will, for hopefully, a short time is a different space. Our priories are to make it safe for our Bistro family and for you. We are gearing for next Friday for to-go at the minimum.
So, the landscape will be changed. Fewer tables and limited, 50% less, seating. There are sanitizer stations all over, use them. Our policy will be to wear a mask until seated at your table. All of us will be wearing them too. Let’s have fun with being creative, making them a part of our persona. There will be nothing on the table as far as condiments. You’ll need to ask for salt/pepper, etc. No water unless requested. Menus are single use. Wow, I think about what this is doing to our land fill. Say your prayers. Reservations will be accepted on all days now and 1 ½ hours is the allotted amount of time that will be given per table to dine. This way we’ll be able to get more of you in and, we’ll have a better handle on the number of guests waiting at any time. Which, by the way, will not be inside of the building. Bear with us as we navigate these uncharted waters.
The summer menu will debate with our re-opening.
LET SHARON AND MARY COOK ended with the Gov’s ok to re-open. We’ve rocked it out for 10 weeks, and to be honest we were both be ready to be done. We knew that it was important to provide the service to you but, holy smokes, we never, never expected the demand. Your thanks and gratitude for us providing the Wednesday and Friday To-Go’s kept us on track. Seeing you and social-distance visiting each week was our fuel to kick out hundreds of meals a week. I can say for myself that a shower has felt never so good at the end of a day.
We’ll continue the to-go when we open. A full menu will be available. Carry-out is going to be very important to “make-up” for what we will lose in seating. And, too, important for those of you who want to wait awhile before going into a restaurant again.
I can never tell you how grateful for your support. It’s a tribute to me, Sharon and our incredible team. It is hard to put into words my thankfulness. It makes a hard time much easier. And, as we move forward into the un-known “new normal” I know that we’ll be able to meld into an “old normal,” in the near future.
