My trip to Scotland was amazing… but first I’d like to thank my staff for doing such an awesome job while I was away. Max kept the kitchen rolling smooth as ever and Amanda handled the dining room like the pro she is. I am so fortunate to have such a great crew that I can get away and not worry about the Bistro. Every person here knows their job and does it with a true passion for hospitality.
Speaking of hospitality, my sister Karen, her husband Joe, and their daughter Elsa were amazing hosts to my sister Christine and me. Karen had every day planned with something exciting to do or see, great food (she is an amazing cook), cocktails and lots of family time. I really love Scotland. It is a beautiful country. In a nutshell we ate, shopped, drove through the countryside, ate, visited the coast and saw seals, ate, walked through a 15th century castle, ate, saw a stinky bird hole, visited the tiniest town I’ve ever see, danced Ceilidh, saw the Plundering Sons perform (Joe’s band), ate some more and had a “few” drinks. Wow! All that in 8 days! I can’t wait to return.
