And, another fine week it has been. Pups and ponies are doing great. Maddie and Sophia are experiencing a lack of outside time as the road and walkways are so icy that I just cannot justify venturing out with them. Thank heavens for a treadmilll and inside riding arena as I am able to get my exercise fix. They can’t other than running up and down the driveway or an ice covered yard. I cringe every time they slip and slide, cross my fingers that they don’t injure a knee, tendon or whatever… but, both need to blow off their pent up energy too. I’ve had some pretty cool rides on my sweet Z. He is, at 17 years old, my bud, my horse that knows the minute I’m in the barn and nickers to me. I still, 7 years later of he and I being partners, learn so much about equitation and how to really be “one” with an animal. It is easy with the pups. They are my “people” as it is the 3 of us living together. They are by my side constantly. The horses are another rung of the ladder. You can’t really cuddle a #1500 horse, although Z tries to big time. Actually, so does Kos but he is still young and figuring out our physical boundaries.  They are very different in their affection towards me but both know that I am their family. Of course, all my furry buds are food driven. Pups get a mini milk bone for a treat and Courtney keeps Kos and Z in apples and carrots.

The weather has been a challenge for us all. Last Thursday was brutal and we had to close early so that everyone could get home safe. I am always wary of forecaster’s warning of this -and -that but, will have to bow down and admit that they have been pretty on-spot lately. Hopefully we are close to  the start of spring. Haven’t seen a robin yet…but soon.

There is a big Cottage/Vacation Show at the Suburban Showcase this weekend. I hope to do a walk through as I’d love to explore Kayaking and saw a Falconer will be there also. Come in to see us if you are in the neighborhood.

Matt is in charge of some awesome Chalkboard Features beginning tonight.

As a Starter:
VEGGIE FLATBREAD: Topped with a Ricotta Schmear, Carrot “Bacon,” Caramelized Onion, Julienne Spinach, Spiced Walnuts, EVOO and Smoked Sea Salt.

BISTRO PLATES INCLUDE:
 
BLACKENED MAHI MAHI: Pan Roasted with Tequila Spiked Tri-Colored Peppers and Onions with Warm Corn Bread Topped with Honey Butter:

COTTAGE PIE: Ground Lamb Simmered with Carrots, Onions, Celery and Peas in a Rich Brown Gravy Topped with Buttermilk Mashed Potatoes and Baked till” Bubbly;

BARRAMUNDI: Dusted with an Herb Cracker Crust and Oven Roasted. Presented over Orzo Tossed with Capers, Garlic, Spanish Olives and Spinach then Garnished with a Roasted Tomato Sauce .Last, not Least, SAVE ROOM FOR DESSERT: A Sweet Jar of Peanut Butter Mousse with Fudge Brownie Bites. YUM!!
