And, and another fine week it has been. I’d like to say rain, rain, go away, and come again some other day but the downpours will bring on the green. Personally, I’m weary of the gray and the funk that comes along with it. It is hard to be “up and bright” with our weather of late. The lack of sun is dismal to say the least. And, I am tired of the mud… living on a dirt road I can’t walk the pups, although I exercise them with a tennis ball which they retrieve for me to throw over and over. I have to admit that I love their musty, wet doggie aroma when they are done running on wet grass. Our routine when coming into the house is for them to get dried off.  I’ll first do Niki, wrapping her in a huge towel, getting her tummy and feet and telling her what a beautiful girl she is in her “babushka.”  In turn Pico gets his time and all is good. We’re all happy to have some hands-on-loving-time.

The storms that have been passing through are very intense with the wind and lightning putting on quite a show. My yard is full of branches, luckily none causing any damage. I love to watch the huge trees swaying in the wind and take in the excitement of the lighting bolts. Interestingly a single bolt can reach 50,000 degrees and strike the earth nearly 100 times a second. Lighting always accompanies a thunderstorm, although the storm may be so far away that we don’t see the rain or hear thunder. Lighting is attracted to the positively charged ground and most likely to strike the tallest object in the area. Don’t believe the myth that “lighting never strikes twice,” as many  flashes strike over and over again within a few seconds in the same area. Good news…the chance of being stuck by lighting is about one in 3 million. Bad news… over 10,000 forest fires are set by lightning each year.

We have begun to “test” some new items for our spring and summer menu. This week we are Highlighting an old time favorite, Baked Brie topped with Macadamia Nut, Brown Sugar and Brandy Glaze & Presented With Fresh Fruit and Crostini. Also Featured is a Kansas City Strip Steak Garnished with Worcestershire Garlic Butter which may replace the Porterhouse… give us your 2 cents please!  Other Chalk Board Features are wonderful too: Pan Roasted Canadian Walleye served with Couscous studded with Sun-Dried Tomatoes, Kalamata Olives and Feta and a Drizzle of Spring Onion Vinaigrette; Sautéed Gulf Snapper over Basmati set in a “Bouillabaisse” Coulis and a Beautiful Vegetarian Tostada Built on a Fried Flour Tortilla spread with a Smash of Navy Beans, Shredded Romaine, Queso Fresco, Grilled Zucchini and Fresh Melon Salsa. YUM!!

Remember, Wednesday is tax day. The first Federal Income Tax Revenue Act was in 1861 and was to fund the Civil War. Early taxes were based on assessments but in 1894 changed to taxing of incomes over 4K at a 2% rate. In 1955 April 15 was declared as the day taxes are due!
