​AND, ANOTHER FINE WEEK IT HAS BEEN…
 
And, another fine week it has been. The last few have flown by with the Regional Dressage Championships and a very busy Bistro. I have to say right off the bat that I’m a LKYGRL that I have Sharon to hold down the fort—no Bistro while I’m away. And, not to forget Jenna and Greg who manage the front and back of the house respectively. My kitchen crew is incredible, each and every one of them, and well, you know the bar and service staff… they make me look good, one and all. Many thanks to the whole team for being respectful of the wonderful opportunity we all have to carry on a really cool 62 year old made-in-Detroit business. And, we’re all grateful to enjoy you as part of the “family tree.”
 
Speaking of the Dressage Finals Z and I did well. It was incredibly intense. Part of the reason I compete is to gain show ring experience. I’ll have to say that riding against the best of the best is humbling at least.   This was only the second season that he and I have competed together and only 18 months that I’ve owned him. In the horse world it is said that it takes at least a year to acclimate to a new horse. I know he and I did so immediately on a spiritual level and have worked hard to become one as horse and rider. It takes time and work. There are lots of gives and takes. He is trained to a level that I may never achieve so his role is now as a teacher, not as a highly ranked competitor that he was before I became his human “mom.” But, I know that he’s settled into his new lifestyle as it’s less demanding. And, Z loves his groom Courtney with whom there is mutual adoration. He is a kind and gentleman with everyone he meets.

​Dressage dates back to ancient times when the military system developed a system of training to produce horses to fight wars on horseback. The first edicts of horsemanship date back to “Athens circa 430-354 and in the early 20th century the Olympics featured officers competing in “The Military” which embraced the evolved disciplines of dressage. In 1948 the U.S. Calvary disbanded and dressage took the civilian world by storm. To date the U.S. has earned many team dressage medals and the sport has grown nationally by leaps and bounds.  It is truly a joy to end a test with horse and a ride well done.
 
Sharon and crew have some awesome Chalkboard Features once again. Lake Superior Perch is Sautéed and served with Buttermilk Mashers, Skinny Green Beans and Almond Butter Sauce; Chorizo con Vieriras a Delicious Spanish Dish of Locally made Mexican Style Chorizo simmered with Bay Scallops, Tomato, Onion and Garlic, Presented over Yellow Rice with Peas; Meaty Pot Pie Chock full of Short Rib Trim Slowly Cooked with Onion, Mushrooms and Corn in a Natural Gravy and Topped with Puff Pastry; Florida Grouper with a Miso Glaze Accompanied with Brown Rice, Sesame Garlic Spinach and a Drizzle of Sweet and Spicy Chili Sauce. Oh, don’t forget the Henri’s Martini: Hendrick’s Gin, Dry Vermouth, House Made Celery Bitters, Celery Salt Rim & A Cocktail Onion. YUM!!!
