​And, another fine week it has been.  For the most part the weather has been glorious. Other than a few spurts of rain here and there it’s great to have some continual sunshine. It is interesting to listen to the weather moaning and groaning going on: too hot, too much rain, too humid, etc... How lucky are we that we’re not in the middle of a hurricane or earthquake? Or floods, fires, drought?  No complaining on this end other than Z and I are very hot when we’re done with the training session. He and Picasso get electrolytes in their water buckets and salt licks both of which help with all the sweating they do in this high heat. Sometimes even just standing in the stall they’ll drip. They always get hosed off though so that they’re clean and not a fly magnet. Speaking of flies they are a menace with the humidity. The barn is very, very clean, fly traps are all around, horses are sprayed and fans mounted on each stall all which help with the problem. July is notorious for huge “bomber” flies, the size of a humming bird, that are relentless once they target a victim. I am terrified when one is going after Z while I’m on his back. The only solutions are to hit it; they are slow and die with a good slap or to get out of the area. All the spray in the world won’t deter them and boy, can they take a chunk out of their prey.
Next Tuesday, July 16th, marks the 50th anniversary of the Apollo 11 Moon mission, mankind’s giant leap into space.  The launch took place at 9:32 EDT from Kennedy Space Center, Florida. It took 3 days traveling at 24K miles per hour to reach its destiny. The lunar landing was 4 days later, July 20th at 4:18 EDT.  Over 500 million people, 1/5th of the world, watched the moon walk or listened via radio. The astronauts Neil Armstrong and Buzz Aldrin spent 21 hours and 36 minutes on the moon in the two-stage Lunar Module Eagle while Michael Collins remained on the Command Module Columbia orbiting the moon during that time. The astronauts wore sealed and pressurized spacesuits made of white, nonflammable Teflon-coated fiberglass. Portable life support systems regulated the suits, provided oxygen, removed carbon dioxide and cooled the men.  The Columbia splashed down in the Pacific Ocean July 24th at 12:50 EDT. The duration of the mission was 8 days, 3 hours, 18 minutes and 35 seconds.  Thanks to the Apollo program freeze-dried food, Velcro, memory foam and water filters were perfected. And, the micro-technology and computer systems developed kick-started today’s industries.  To top it off, President Nixon spoke with Aldrin and Armstrong while they were on the moon. Oh, let’s not forget Michael Jackson’s Moon Walk…

Bistro Plates Include:  Canadian Walleye, Pecan Dusted, Sautéed and served over a Roasted Beet, Charred Bean and Orange Salad with a Dollop of Whipped Horseradish and Crispy Shoestring Potatoes; Bistro Filet, Teres Major Muscle, Grilled and Accompanied with Cauliflower Gratin, Fire Grilled Tomatoes and DJB zip Sauce; Rainbow Trout Stuffed with Lemon, Dill and Garlic, Grilled until Crispy and Presented with Saffron Basmati Rice,  Roasted Peppers and Eggplant and Finished with a Basil Chili Oil and Lastly, Always a Bistro Favorite Pan Seared Jumbo Sea Scallops with a Yukon Gold Potato, Corn, Peach and Applewood Smoked Bacon Hash, Sweet Basil Remoulade and Crispy Fried Carrots. YUM!!!
